Mycotoxins, naturally occurring chemical substances produced by molds (fungi), may contaminate agricultural commodities (nuts, grains and cereals, spices, and dried fruit). Foods contaminated with mycotoxins can sometimes cause acute illness and are associated with increased cancer risks from long-term exposure. Many countries, including the European Union and United States, have adopted regulations to limit consumer exposure to mycotoxins.
